This exceptional filter coffee comes from Javier Cardozo and his son Arvey, marking the second year Calendar Coffee have selected their lot. With nearly 50 years of experience, Javier’s dedication to his craft is evident in every cup—his coffees are renowned for their exceptional sweetness and clarity.
At Javier’s farm, La Cabaña, cherries are handpicked every 15 days to ensure peak ripeness. The harvest is then processed at his wet mill, where the cherries undergo a 36-hour fermentation before being washed and dried on covered, raised beds. While Javier mainly cultivates Colombia and Castillo varieties, this lot is exclusively picked from his prized Bourbon trees.
The result is a beautifully balanced and complex coffee, brimming with notes of juicy plum, delicate black tea, hibiscus, and a subtle hint of hazelnut. Expect a clean, sweet cup that’s perfect for filter brewing—an elegant showcase of Huila’s rich coffee heritage and Javier’s lifelong expertise.
