Working alongside Muraho, we source coffee from their washing stations nestled in the picturesque Nyamasheke, Gakenke, and Nyabihu regions. Among these stations stands the remarkable Shyira Washing Station, perched at an impressive altitude of 2000 MASL. Situated amidst breathtaking landscapes, Shyira boasts a unique process infused with local pride and tradition.
At Shyira, every step is meticulously executed to ensure unparalleled quality. Cherries undergo rigorous hand-sorting before a gentle pre-pulp float, ensuring only the finest beans proceed. The cherries are then meticulously pulped and fermented in dedicated concrete tanks, with a touch of ceremonial foot-stomping to aid the fermentation process. This cultural practice not only enhances fermentation but also fosters a sense of community and ownership among workers. Amidst harmonious songs and rhythmic stomping, the magic of Rwandan coffee comes to life.
