Shiitakes that have been grown on our farm have been enriched with Vitamin D “the sunshine vitamin” by increasing the conversion of pro-vitamin D (ergosterol) already present within shiitake mushrooms to vitamin D2 (ergocalcerferol) by exposing them to sunlight. On analysis, our Super D Shiitake have 15-fold more vitamin D, than those not exposed to sunshine. Vitamin D is an essential vitamin with numerous health benefits, including bone health, immune system and has a role in other functions within the body for maintaining health. It can be acquired naturally from sunlight, from meat, dairy products and oily fish. Our enriched Vitamin D Shiitakes mushrooms are a delicious and easy way of acquiring an intake of vitamin D and are suitable for vegetarians. They are rich in natural glutamic acid “umami” containing amino acids and add delicious savoury flavour to any dish, they also have the added benefit of containing glycoproteins/β-glucans that may have additional health benefits.
