This lot is a blend of coffees from female producers that are part of “Empowering Women” program that Pacayal Coffee has. The program has many different aspects that all revolve around creating / increasing income for women in the program.
The coffee grown by this group of women is all processed as washed coffee, mostly in the communal wet mill in Chinacla and then separated by quality and sold together under the brand of the Female Producers of Pacayal.
Process:
The cherries were picked and delivered to the washing station in Chinacla town. After sorting and separation of floaters the beans were pulped and placed in the fermentation tanks. Depending on the ambient temperature, the fermentation took between 12-18 hours. Then the coffee was washed and spread out on patio. The controlled drying took between 8 to 12 days.
