🌿 From El Placer, With Love
Produced by Sebastian Ramirez and his team at Finca El Placer, with thanks to @rogerg_zapata for linking us to this stunning lot.
Sebastian is a fourth-generation grower turned alchemist. After years studying at Sena, he transformed his family’s century-old farm into a lab of flavour and fermentation — experimenting with wild fruit infusions, thermal shocks, and precision drying.
His work has captured the imagination of the coffee world, earning titles at the 2024 Irish Barista Championship and a Top 6 finish at Worlds — a testament to his creativity and craft.
⚗️ Process: Thermal Shock Honey
This Pink Bourbon underwent a twice-fermented, co-fermented process — enriched with local wild berries to amplify complexity and sweetness.

Selective Harvest & Sorting – Only the ripest cherries make the cut.

Anaerobic Fermentation – 120 hours sealed at 18°C with CO₂.

Thermal Shock Co-Ferment – A second 120-hour fermentation at 40°C, infused with wild berries — deepening fruit tones and creating that signature glow.

Honey Process Drying – 20 days under canopy, 5 in parabolic dryers for a slow, steady finish.

Stabilisation & Selection – Rested, hulled, hand-sorted, and vacuum-packed for maximum clarity and sweetness.
