Gilles Troullier began his wine journey working for the Chapoutier Family in the Southern Rhone before moving to Roussillon to manage their holdings there. At the same time he also bought some vineyards to make his own wines .
L'Ultim is made from 100% Syrah, farmed at 550m. The grapes undergo 5 days of maceration in Stainless steel tanks, and are then aged for 10 months in concrete tank. l@ultim is bottled unfiltered and unfined
