Nero d'Avola has long been the most important grape on the island of Sicily, thriving in the heat of the Mediterranean sunshine. At Colomba Bianca, the highest standards are attained through the use of innovative technology and the careful process of mapping the terroir according to the weather patterns, harvesting time, soils and vine age. The vineyards are organic and all grapes are hand-picked at optimum maturity into small containers to prevent them from being prematurely crushed. After fermentation the wine is aged in stainless steel tanks for 5 months to retain the purity and freshness of fruit. Colomba Bianca 'Vitese' Nero d'Avola is a brilliant, deep red in colour with rich, juicy flavours of ripe plum and black cherries interlaced with subtle violet notes.
