When choosing our Christmas coffee, we always try to pick something that the whole family will love. Nothing too challenging, always well balanced and sweet - with flavours that’ll keep you coming back for more! This year, we’ve picked a special lot from Honduras which is perfect for brewing in big batches and delicious with an extra helping of Christmas pud!
Dely Suyapa Matute is a female producer from Intibuca and is quite a remarkable lady! When she is not looking after her six children, she works at the farm, making sure only perfectly ripe cherries are picked and processed correctly. All of the coffee here is dried on raised beds which is not common practice in Central America. With more air circulating around the beans this allows them to dry evenly, giving the coffee that really clean and crisp flavour which we love. In 2014, Dely and her husband placed 4th in the Cup of excellence and have been producing some of the best coffee in Honduras ever since. We feel very lucky to be roasting their coffee this year and it will be even more special drinking it over the holidays.
This coffee is fruit forward, structured and very sweet! Expect lots of juicy apricot notes upfront, with floral herbals, layered pomegranate and caramels underneath.
